Considerada a melhor época de vendas para os confeiteiros, a Páscoa traz grandes expectativas. Neste segundo ano de pandemia, para tentar atrair os consumidores, esses profissionais estão apostando na inovação como peça-chave para se manterem competitivos no mercado.
Segundo uma pesquisa realizada pela Confederação Nacional de Dirigentes Lojistas (CNDL) e pelo Serviço de Proteção ao Crédito (SPC Brasil), em parceria com a Offer Wise Pesquisas, cerca de 102,7 milhões de brasileiros devem realizar compras de Páscoa em 2021. Dessas pessoas, 40% optarão pelos ovos caseiros artesanais. Com a diversidade de produtos no mercado, os fatores que influenciam os consumidores são variados. Ainda de acordo com a pesquisa da CNDL, o preço e a qualidade são determinantes.
• Inovar com qualidade
Para Luciana Oliveira, sócio-proprietária de uma confeitaria junto com a irmã, Laís Oliveira, na cidade de Bom Despacho, o gosto pela gastronomia é uma herança dos avós, já que eles eram donos de uma tradicional padaria no município. Além disso, a mãe trabalhou por muito tempo em uma lanchonete, onde as filhas também ajudavam. Anos se passaram e, após a família produzir e vender empadas e bolos na faculdade e para vizinhos, as irmãs decidiram abrir um negócio de bolos, enquanto os pais seriam responsáveis pelas empadas. “Já estávamos no comércio de bolos e doces, quando há sete anos começamos a fazer os ovos caseiros de colher. Nessa época, os ovos caseiros que existiam, seguiam o padrão de muita embalagem, pouco conteúdo e o sabor não era agradável e o produto era desvalorizado. Os ovos de colher vieram para revolucionar. Buscamos em outras cidades embalagens, formas, cursos, e nos especializamos para oferecer para nossos clientes além de sabor, um ovo bonito”, conta.
Segundo ela, seu diferencial está na qualidade dos produtos e nas novidades que traz a cada ano. “Estamos sempre atentas a tendências de mercado e procuramos adapta-las a nossa realidade. Buscamos atender aos pedidos de nossos clientes e surpreendê-los com uma experiência agradável! Nosso produto tem que ser bonito e gostoso”, afirma.
Luciana conta que para esta páscoa há encomendas para Bom Despacho, Nova Serrana, Belo Horizonte e São Paulo. O sucesso se dá pela inovação no cardápio. “Esse ano apostamos em ovos maiores, tamanho família. E versões para as crianças montarem seu próprio ovo de Páscoa. Sucesso no ano passado, nosso ovo cumbuca kids, um ovo com casca completamente inovadora e artesanal, permanece no nosso menu. Para presentear, lançamos o ovo de corte: Sendo em 3 versões, com cascas diferenciadas e sabores agradáveis! Investimos também na apresentação dos nossos produtos, e contratamos uma fotógrafa especializada em fotos de comida. Essa ação nos fez ver os nossos ovos com novos olhos e enxergamos ainda mais o nosso potencial.”
Contudo, apesar de receber muitos pedidos, Luciana sente que a pandemia atingiu seu negócio. “Tudo está mais complicado. Ano passado cogitamos não produzir na Páscoa, mesmo com todas as matérias primas compradas. Pensamos muito, mitigamos os riscos, investimos em um frasco com álcool em gel para nossos clientes (na época estava caro e em falta). De lá para cá, tudo subiu, matérias primas e principalmente o risco da doença. Nossas compras e vendas são feitas de forma online! Desde o início da pandemia nossas entregas e retiradas são feitas de forma consciente (com uso de máscara, higienizando as mãos e dando preferência para recebimento por transferência bancária)”, explica.

O gerente da Regional Centro-Oeste e Sudoeste do Sebrae Minas, Leonardo Mól, percebe o aumento no apreço às pequenas empresas. “A pandemia trouxe a valorização do local e isso gera uma oportunidade de crescimento para os produtores artesanais. Porém, eles têm um desafio que é produzir com alta qualidade e de forma artesanal, personalizando os produtos e serviços e oferecendo uma boa experiência para o cliente, por meio do atendimento virtual”, explica.
